Coffee grounds: why they work, why they usually fail, and when they do succeed

Oyster mushrooms on coffee grounds is the idea everyone knows and almost nobody pulls off. It sounds too good: tonnes of coffee grounds are thrown away every day, they come out of the machine boiling hot and therefore clean, and oyster mushrooms love the nutrients in them. All true. Yet the average coffee-ground bucket ends up a green, sour mass. This piece explains why, and how to land on the right side of the statistics.

Why do coffee grounds work in principle?

Two reasons. Coffee grounds are rich in nitrogen and sugars, far richer than straw, so mycelium grows on them fast. And fresh grounds are practically sterile thanks to the heat of brewing: they leave the machine at 90 degrees, which has killed most competitors. Mix them with spawn within a few hours of brewing and you give the oyster mushroom a clean, rich start. That is the whole idea, and in that form it works.

So why does it fail so often?

Three reasons, and the first is by far the most important.

Old grounds. The sterility of coffee grounds lasts hours, not days. Grounds that sat on the counter for a day, or were collected in a tub at the coffee bar for a week, are already occupied by moulds and bacteria. You cannot see it, but it is there, and in the warm, wet bucket that head start beats your spawn. The classic recipe "collect a week of coffee grounds, then mix in spawn" is precisely the recipe for green mould.

Too wet. Coffee grounds hold a lot of water and are fine-grained, so there is little air between them. A packed bucket of grounds becomes an oxygen-free sludge inside where bacteria take over. The sour smell that comes with it is described in the smell piece.

Too rich. What makes coffee grounds nutritious for oyster mushrooms also makes them nutritious for anything that happens to get in. On a poor substrate like straw a contaminant struggles, on coffee grounds it has a feast.

The method that works

  1. Work in single batches. Only use today's grounds, ideally still lukewarm. If you brew little coffee at home, ask a café or office to save one morning's worth, not a week's.
  2. Mix in something airy. A third to a half of chopped straw, hemp fibre or pasteurised wood chips through the grounds. That brings air into the mix and dilutes the richness.
  3. Plenty of spawn. Use more spawn than with straw; a full 80 gram pouch for a five litre bucket is not too much. Speed is your only weapon against contamination.
  4. Check the moisture. The mix should be moist, not wet. Squeeze a handful: a few drops is right, a trickle is too much. Too wet? Let it drain in a sieve for an hour.
  5. A bucket with holes. Small air holes in the sides and bottom, lid resting loosely on top, and a cool spot around 18 to 20 degrees. Not in the sun, not next to the radiator.
  6. Colonise and fruit. After two to three weeks the mix is white. Then more light and air, daily misting, and the oyster mushrooms push out through the holes.

Can you work in bulk?

Only if you freeze the grounds. Fresh grounds that go straight into the freezer stay clean; thaw them on the day of use and treat them as fresh. That way you still collect a full bucket without anything growing in it in the meantime. It is the only way to make the "save up for a week" method safe.

Which species?

The common oyster and the pink oyster both do well on coffee grounds, the pink best of all because it is so fast that contamination never gets a chance. In summer the pink is therefore the smartest choice, in winter the common. Other species such as shiitake or lion's mane do not belong on coffee grounds; they want wood.

The honest conclusion

Coffee grounds are neither a miracle substrate nor nonsense. They are a good substrate with a shelf life of a few hours. Respect that and you grow free, fast oyster mushrooms on them. Ignore it and you grow green mould and wrongly conclude that coffee grounds do not work. They work. Only fresh.
