Why your oyster mushrooms grow long stems and tiny caps (and how to fix it)

The photo arrives often: a bunch of oyster mushrooms looking like a handful of pale asparagus with mini caps on top. Ten centimetre stems, caps the size of a coin. The question that comes with it is usually whether this is the wrong species, or a sick kit. Neither. It is a healthy grow kit telling you exactly what is wrong with its spot, and the message is nearly always the same.
What is the cause?
Too much CO2 and too little light, usually both at once. Mycelium breathes, just like us, and produces carbon dioxide doing so. In an enclosed space, a cupboard, a closed box or a stuffy cellar, that gas builds up around the block. To an oyster mushroom, lots of CO2 is the signal "you are still deep inside the wood". Its response is logical: stretch the stem until it finds fresh air somewhere, and only then invest energy in a cap. Low light amplifies the effect, because light is the fungus's proof that it is outside.
Why does the fungus do this in nature?
Think of an oyster mushroom in a hollow tree trunk. The mycelium sits inside, where the air is still and full of CO2. To spread its spores the mushroom has to get out, into moving air. So the stem grows towards light and fresh air first, and only there does the cap unfold. Your grow kit in the utility room is doing exactly what it would do in the forest. It is not broken, it is searching.
Are they still edible?
Yes, entirely. A long stem is the same mushroom as a short one, just distributed differently. The stems are a little tougher than the caps; slice them thinly and fry them as described in our frying piece. In a stir-fry or soup you will not notice. So do not throw them away.
Can you still correct the current flush?
Only a little. A mushroom that has grown long will not shrink back. But if the caps are still small and young, moving the kit to a brighter, airier spot can let the caps fill out somewhat. Do it the moment you notice, not tomorrow. Otherwise: harvest, eat, and set the next flush up properly.
How do you prevent it on the next flush?
- Air. Put the block in a room where a door or window opens daily. Not in a cupboard, not in a closed box. If you place a clear container over the block for humidity, cut a few generous holes in it or leave it ajar.
- Light. Daylight in the room, no direct sun on the block. Anywhere you could read without a lamp is enough; a lamp on a timer works too.
- Distance from the wall. A block with its opening against a wall or in a corner breathes its own exhaust. Turn the cut towards the open side of the room.
- No draughts. Moving air is good, a cold stream of air straight onto the block dries out the young caps. The difference is subtle: fresh air in the room yes, a fan on the block no.
Does this apply to other species too?
Yes, each with its own variation. A lion's mane short of air makes a dense, smooth ball without spines. A maitake in stale air produces thick, horn-like stubs that never fan out. Shiitake usually stays tidy on logs, but indoors sometimes grows a long, thin stem. The fix is identical for all of them: more fresh air, more light.
The rule to remember: long stem, tiny cap, means the fungus wants out. Give it what it is looking for and the next flush will look like a fan again.
