Wooden plugs colonised with brown beech mushroom mycelium (Hypsizygus tessulatus) for inoculating fresh hardwood logs.

The brown beech mushroom, buna-shimeji in Japan, has marbled brown caps and grows in dense clusters. Raw it is bitter, fried it turns sweet and nutty, so always cook it through. Beech is the classic host; drill holes of 8 to 10 mm and seal them with wax.
